This is the best pork belly I have ever cooked! Skin dried, scored, and rubbed with salt and baking soda. Braised in hoisin, soy sauce, sesame oil, chili paste, black vinegar and stock (make sure skin stays dry during braising). Roasted at 275F for 3 hours, 40 min at 325F, then finished under the broiler for about 5 minutes until the skin is as crunchy as pork rinds. Soft and juicy pork punctuated with crispy bits of skin!
