Cross section of the brisket sammies for Fourth. Brisket smoked hot (275f to 203f internal – salt & pepper only), chopped with carmelized shallots and grated cheddar, and piled high on toasted bread that had been slathered in spicy mayo (4 part mayo, 2 part bbq sauce, 1 part hot sauce, cayenne to taste). Brisket mix is topped with balsamic/honey coleslaw. HAPPY FOURTH OF JULY!
