Roasted pork shank, one of our favorites when the weather gets cold. Brined overnight, then rubbed with salt (with the skin also rubbed with baking soda) and roasted 3 hours at 350f. Finish under the broiler to get perfectly crispy skin. Meat falls of the bone, and we chop it up, and serve on grilled flat bread with a slaw and a sauce made from the pan drippings.
