My Lazy Man’s Cassoulet
This right here stole the show – my lazy man's cassoulet. Browned 1.5lb of cubed bacon cut off the slab, then a ton of shallots, celery and carrot. Deglazed with tomato, which then caramelized. Nested a whole smoked pork shank in the middle and covered with stock. Roasted for 3 hours at 350f, pulled out the bones, added 4 cans drained cannelloni beans and herbs, and back into the oven at 300f for 3 hours. This will be a Christmas tradition!
